Easter Green Salad with Figs and Balsamic Dressing

Serves 4

Salad

  • 1 head green leaf lettuce or 4 handfuls baby spinach

Dressing

  • 1/2 cup plus 2 Tbsp. extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 4 dried figs, stems removed
  • 1/2tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1–2 cloves garlic

Blend all ingredients in a blender or food processor until smooth. Season to taste and toss enough dressing to lightly coat the salad.

  1. Figs are not in season here now. They are a summer fruit.
    Surely it is better to eat them then, after picking them from my own garden,
    rather than buy those tasteless ones coming from thousands of miles away?
