Recipe of the Week
French Tomato Basil Soup
Serves 2

3 medium tomatoes
Juice of 1 lemon
1 avocado, peeled, seed removed
2 tablespoons chopped fresh basil
1 small garlic clove
Fresh basil leaves chopped for garnish (optional)

In a blender, blend the tomatoes until chunky.  Add the lemon, avocado, basil, and garlic.  Blend well.  Pour into bowls and garnish with fresh basil leaves, as desired. From Souping is the New Juicing
