Dark chocolate offers a wide variety of antioxidants, which include polyphenols, flavonoids, and catechins. It raises HDL and prevents LDL oxidation. It is oxidized LDL that is the problem for the heart. And it can even protect your skin from sun damage and improve brain function.

Gluten Free Chocolate Macaroons

Makes 20 macaroons

  • Screen Shot 2015-12-14 at 7.55.57 AM3 cups unsweetened coconut flakes
  • 3 Tbsp. virgin coconut oil, melted
  • 1/2 to 1 cup coconut nectar, depending on taste
  • 1 tsp. almond extract
  • 1 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 tsp. sea salt

Preheat oven to 325 degrees. Place coconut flakes in a saucepan and toast on medium heat for 2 minutes, or until toasted.

In a medium bowl, combine oil, coconut nectar, almond extract, toasted coconut, cocoa powder, flour, and salt. Stir until combined.

Shape 2 Tbsp. of mixture at a time into mounds, pressing mounds firmly. Place on parchment paper 2 inches apart. Do not press down.

Bake 15 minutes. Cool and transfer to baking rack.
