As we celebrate Labor Day,
I also want to celebrate you and your health. You work hard; you need super health and energy to keep up with all you have to do. Juicing is a way to give your body the energy it needs day in and day out. Also, raw foods provide the nutrients unspoiled by heat and processing. I’m highlighting a delicious raw food recipe served at our retreats—Nori rolls and cucumber rolls with almond dipping sauce. We enjoyed this dish as Monday’s dinner at our retreat. Cucumber or Nori Rolls Cucumbers sliced on the mandolin or use organic Nori Roll Sheets Filling * sunflower sprouts * avocado sliced * carrots, matchstick cut * fresh basil and mint, chopped Roll filling in nori sheets or thinly sliced cucumber slices Dipping sauce * 1 Thai chili * 2 tablespoons grated ginger * 1 clove of garlic * 1 cup unsweetened almond butter * 2 tablespoons lemon juice * 2 teaspoons coconut nectar or raw honey * Water to thin Blend everything until well combined. Dipping sauce should be fairly thick. |
