Here is the RECIPE!!!

We serve this yummy pizza on the first night of our Raw Food & Juice Retreat. It’s always a big hit. Last Saturday I served this pizza at our Saturday lunch and prayer event. Since posting pictures of my pizza, I’ve had numerous requests for the recipe. Well…here you go!

Pizza Crust

  • 2  cups soaked buckwheat groats *
  • 3/4  cup finely grated carrots (or use carrot pulp, which is much easier)
  • 3/4  cup ground flax seeds 
  • 1/2  cup extra virgin olive oil
  • 1  tablespoon Italian seasonings (or fresh herbs to taste)
  • 1-2   garlic cloves, chopped
  • 1-2 teaspoons Celtic sea salt
  • Water as needed (usually around 1/2 cup)

* soak overnight. Rinse very well. Leave in colander and cover with tea towel for 24 hours to sprout, but you don’t have to sprout it. Rinse several times during this period. You will have sprouts on day two. But you can make the crust with the soaked buckwheat.

Mix all ingredients together in a food processor. Start with garlic and buckwheat groats followed by the rest of the ingredients. Scoop dough onto dehydrator sheets and spread evenly across the sheet. Press out the dough evenly to about 1/8 to 1/4 inch thick. Score into squares. Dehydrate at 105-115 for 7 to 10 hours and flip. Dry for another 7-10 hours or until crust is completely dry and crisp.  If crust is even slightly moist, it will not be good. (You can’t over dry but you can under dry

This recipe makes about 36 pizza crackers. You should at least triple this recipe. There should be 2-3 pizzas for each person. People are hungry after a long day of traveling. We don’t want to run out.

Cashew Cheese

  • 2 cups raw cashews soaked for 2 or more hours
  • 2 tablespoons lemon juice
  • 1 teaspoon sea salt
  • 3 tablespoons water or more as needed

Blend all ingredients in the food processor until creamy. The key is to keep the food processor running until everything it is very well combined and very creamy. This will take several minutes.

Basil Pesto

  • 2 cups basil leaves
  • 1 clove of garlic
  • 1/4 cup extra virgin olive oil
  • 1/2 cup pine nuts or walnuts
  • 2 tablespoons lemon juice
  • Sea salt and pepper to taste
  • Spread a layer of pesto on the cracker and then top with cashew cheese.

Top pizza with fresh basil, thyme or sliced kalamata olives 

You need a dehydrator to make this pizza crust. Don’t purchase a round dehydrator; you can’t do great crust with those.  I recommend Excalibur.
