Learn to Make Dehydrated Crackers and Snacks

I’m adding a dehydration class to our retreats! I’ve had many requests for more food demos. So I’ve added a class on dehydrated snacks and crackers for both retreats this year. You will love learning how to make dehydrated foods. They make such great snacks. And the crackers can be a base for raw pizza or a great addition to any meal.

Also, I want to answer another question I’ve been getting about Santa Fe. It is NOT hot in the summer as is Arizona. It’s high desert and the summers are beautiful. In August, the temperature is usually in the low 80s. We still have a few rooms left for that retreat. You can register here. Dehydrated Onion Rings

  • 3-5 onions (yellow, white, Walla Walla sweets
  • 1/4 cup apple cider or coconut vinegar
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons garlic, mined or pressed, optional
  • 1/2 teaspoon Celtic sea salt
  • Pinch of cayenne pepper

Cut onions into thin slices and set aside. Add lemon juice and vinegar to a bowl. Very slowly, pour in the olive oil by dripping it in from a distance of about a foot above the bowl while whisking continually.  This will create an emulsion where the oil is well combined with the other ingredients and won’t separate as easily.  Or you can put the ingredients in a blender and process until well combined. Then stir in the sea salt, minced garlic, if using, and cayenne. Add the onion slices to the emulsion and marinate for several hours. Shake off excess marinade so that onion rings are not dripping with marinate. Place onions rings on dehydrator sheets and dehydrated for about 7 to 8 hours at 105 to 115 F or until crisp.
