St. Patrick’s Day Salad



Ingredients
• 6 cups chopped greens, your favorite kind
• 1 green apple, chopped
• 1 cup chopped cucumber
• 1 cup shelled edamame
• 1/2 cup thinly sliced green onion
• 1 avocado, diced
• 1 cup broccoli florets
• 1/2 cup pistachios, roughly chopped

Herb Dressing
• 1/3 cup olive oil
• Juice of 1 lemon
• 1/2 teaspoon dijon mustard
• 1/2 teaspoon maple syrup or a few drops of stevia
• 2 tablespoons chopped fresh herbs, your favorite kind
• 1 small clove garlic, minced
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper

Instructions

• Place all dressing ingredients into a jar and whisk or shake until combined, set aside.
• Place chopped greens into a large bowl and top with the remaining chopped salad ingredients. Drizzle salad with desired amount of dressing and toss until combined.
