Why Make Nut Milk?

Brain Happy Nut Milk Made Healthy!

Many people are turning to nut milks instead of dairy because there is a protein in dairy that can cause inflammation and digestive problems for some people. Plus, nut milk is high in brain-healthy mono and polyunsaturated fats along with key nutrients like magnesium, copper, and vitamins E and B6, which are not found in cow’s milk.

The Brain Healthy Kitchen says, “Processed nut milks are undeniably convenient, but the proportion of nuts to other ingredients is not ideal. In fact, you’d have to drink an entire half-gallon of almond milk to get the same nutrients as a handful of almonds. (Blue Diamond Almond Breeze Almond Milk, for example, is only 2% almonds, 98% water, flavorings, and additives.) On the other hand, my homemade almond milk recipe is 2 cups almond to 3 cups purified water. The thickeners, stabilizers, and emulsifiers in processed nut milk are what give it a creamy, milk-like consistency.
“The homemade version of nut milk doesn’t rely on stabilizers and thickeners. It doesn’t need any of that. It has just the right consistency. The milk I made in the Nama juicer has not separated. But if you see some separation after it sits in the fridge, just give it a good shake to easily blend it again.

Processed, store-bought nut milks are often flavored and sweetened and can contain as much as 14 grams of added sugar per 8-ounce cup. That’s more sugar than any one person should consume in one day! You can add your own sweeteners such as a few drops stevia and some vanilla or make it with coconut water.

Almond Milk Recipe
This almond milk is really delicious.
• 2 cups almonds (or walnuts, cashews, pecans or hazelnuts)
• 3 cups purified water or coconut water (you may need no added sweetener with coconut water)
• Several drops liquid stevia or 3 chopped, pitted dates or 1 tbsp pure maple syrup
• ¼ tsp sea salt
• 1 tsp vanilla
• Soak almonds overnight or at least 4 hours.
• Drain and rinse.
• Alternate adding almonds and purified water to the Nama juicer.
• Add stevia or maple syrup (or blend with dates) and stir in salt and vanilla.
• Refrigerate and enjoy!
